“I wouldn’t,” I assure her. But she’s looking at me a little funny and to be honest, I don’t blame her. Then again, I’m pretty sure I’m looking at her funny, too.

“Have you ever baked before?” she asks as she takes out margarine, some purple egglike goo, and a lot of lavender flour.

When she doesn’t put anything else on the counter, I breathe a sigh of relief. After all, how hard could it be to mix up three ingredients? Four, if you count the pitcher of ice water already sitting next to the mixer.

Very hard, it turns out, even when there are no shoes involved.

A few hours later, I’m covered in flour, margarine, and what I’m pretty sure is Smokey’s weight in purple tofu pastry cream. My only clean pair of jeans is coated in whatever this egg mixture is, and my only pair of shoes might as well be choux—though the one positive I can actually say about this day is that I now know the difference between the two.

As if that’s not bad enough, Gillie and the two other bakers working today keep looking back at me with varying expressions of concern. Then again, I’m concerned, too, so why shouldn’t they be? After I butcher the fifth batch of choux, Gillie takes me aside and tells me that I’m being reassigned to the biscuit station, where I need to roll out the biscuit dough.

Which is already made, thank God.

This job seems right up my alley. I mean, all I have to do is grab a lump of dough, roll it out, then fold it over and roll it out again. I’m supposed to do this several times to increase the layering in the biscuits and then use a biscuit cutter to cut them out and put them on a tray.

After a morning spent in choux hell, this seems like a walk in the town square. At least for the first three seconds before my rolling pin gets stuck in the dough. And it turns out, that’s actually the highlight of my day. Everything else is definitely an uphill pastry war—one where the soldiers just might have to eat choux leather if they have any hopes of survival.

The end of the day finally rolls around for me at about four o’clock. As I take off my apron—which is as useless as I am in the kitchen—Gillie comes out of her office, pulls me to the side. “You were great today, Grace. A real go-getter.”

I say what we’re both thinking. “But not a baker.”

Gillie’s eyes soften as she shakes her head. “Unfortunately, most definitely not a baker.”

My shoulders sag. I got fired from my very first job. In one day.
