It is strange now to think that while writing Time to Say Goodbye, me and my family had been spending as much time as we could at the coast with our dogs and loving it. I know many of you will have had your holiday plans postponed or cancelled and my heart goes out to you – I miss our lodge at the seaside and, of course, my family. At the time of writing this letter, this terrible Coronavirus has worked its way around the world and has us all on lockdown – it’s very frightening. I hope that by the time you’re reading this, we’re back outside and reunited with our loved ones. I know it has been a difficult time for everyone and I am sending my best wishes to every single one of you. I’ve received some lovely messages from people reading my books during self-isolation and I am so pleased if I’ve managed to bring any comfort or distraction to my readers – I know I certainly turned to books, and almost ran out!

I hope you all manage to enjoy the summer, and I look forward to hearing from you as always.

Take care and much love,

Rosie xxx

You will need:

1 whole chicken 1 lemon, cut in half
1 chopped onion Few sprigs of thyme
2 chopped carrots 30g butter

Method:

1. Preheat your oven to 170°C/190°C fan/gas mark 5

2. Put the chopped onion and carrots around the base of the roasting tin.

3. Season the cavity of the chicken with salt and pepper, then place both lemon halves and the thyme inside the chicken.

4. Place the chicken on top of the carrots and onions and rub all over with butter, then season with salt and pepper.

5. Put the roasting tin in the oven and cook for 1 hour and 20 minutes. To check if the chicken is cooked, the outside should be golden brown and the juices should run clear.

6. Remove from the oven and rest the chicken for 15 minutes.

7. Serve with roasted potatoes and other vegetables, and enjoy!

Prologue

Fenny Drayton, December 1867

‘Please, Opal … can we stop now? Me feet are hurtin’ an’ me tummy aches.’

‘Not yet, sweetheart, we have to find somewhere to stay first, before it gets properly dark.’
